EXPERIENCE: July 1983 - present PROFESSOR OF FOOD ENGINEERING: Department of Biological and Agricultural Engineering, Department of Food Science and Technology, University of California - Davis. Primary responsibilities include research and teaching in food science and engineering. Current research involves measurement of quality changes in foods during storage and distribution; studying heat and mass transfer in foods during drying, thermal processing, immersion frying, modified atmosphere packaging, freezing and frozen storage; and development of computer integrated manufacturing systems for the food industry. Teaching involves undergraduate and postgraduate courses on unit operations in food processing and heat and mass transfer in food engineering. October 1995 - August 1997 ASSISTANT VICE PROVOST- Academic Planning and Personnel: University of California - Davis. Duties include reviewing academic personnel actions related to appointments, tenure, and promotions for all constituent colleges of the University. Plan and conduct conferences and workshops for new chairs and orientation of new faculty. Conduct analysis of faculty data to develop policies on hiring, salary, and retention.
July 1979 - June 1983 ASSOCIATE PROFESSOR OF FOOD ENGINEERING: Department of Agricultural Engineering, Department of Food Science and Technology, University of California, Davis. Responsibilities included research and teaching in food engineering. Projects funded by industry, state and federal government included, energy accounting and conservation in the food industry, cereal grain drying and storage, thermal processing of proteinaceous foods and development of a squid processing system. Teaching involved courses on heat and mass transfer to students in food science curriculum, thermal unit operations to engineering students and graduate courses on advanced heat transfer in foods. June 1975 - June 1979 ASSISTANT PROFESSOR OF FOOD ENGINEERING: Department of Agricultural Engineering, Department of Food Science and Technology, University of California at Davis. Responsibilities included research and teaching in food engineering area. Research included energy conservation in the food processing industry, rice drying and storage, design and development of a salt agglomeration process, high-temperature-short-time blanching and energy use in citrus packing plants. Teaching involved a course on heat and mass transfer to students in the engineering major and food technology courses to students in the food science major. September 1974 - June 1975 ASSISTANT PROFESSOR: Agricultural Engineering Department, Department of Food Science and Human Nutrition, Michigan State University. Responsibilities included teaching graduate students in the areas of thermal processing of foods, environmental measurements, and food process engineering. Conducted research in the areas of computer simulation of food quality during storage, vitamin stability in dry and low-moisture foods, and potato storage. June 1973 - August 1974 RESEARCH ASSOCIATE: Agricultural Engineering Department, Department of Food Science and Human Nutrition, Michigan State University. A three-fourth time research appointment to supervise and conduct research in computer simulation of liquid food quality, freeze-drying of low-molecular-weight liquids, potato storage, fresh blueberry handling, and strawberry harvesting. Teaching responsibilities included organizing and assisting in teaching the laboratory section of a graduate level course in thermal processing of foods. July 1973 - Received a fellowship to attend a special summer session program on "Food Deterioration" at Massachusetts Institute of Technology, Cambridge. September 1972 - June 1973 RESEARCH ASSISTANT: Agricultural Engineering Department, Department of Food Science and Human Nutrition, Michigan State University. SHORT COURSES: During 1975-2004, organized and presented numerous short courses for the food industry. These short courses typically of 4 to 5 days duration were held in Davis, San Francisco, Chicago, Copenhagen, Istanbul, Jakarta, Porto, Buenos Aires, Santiago, Shanghai, Nanjing, Beijing, Kuala Lumpur, Auckland, Valparaiso and Dunedin. Topics for these courses included the following: Energy Conservation in Food Processing, Quality Management in Food Processing, Quality Stability and Shelf Life of Foods, Freezing Technology, Aseptic Processing of Foods, Principles of Food Processing, and Project Management. WORKSHOPS: Planned, organized and directed three international workshops with invited scientists from around the world. The topics and dates of these workshops were as follows: Food Properties and Computer-Aided Engineering of Food Processing System, Porto, Portugal, October 16-21, 1988, supported by NATO Role of Food Engineering in the Development of The Indonesian Food Industry, Jakarta, Indonesia.
